Vegetarian Stuffing

Vegetarian Stuffing Recipe - Ingredients
  • 6oz onion, diced
  • 4oz celery, diced
  • 4oz apple, peeled and diced
  • 2 tsp dried or 3 tbsp. minced fresh parsley
  • 1/2 tsp dried sage
  • 125ml
  • 1/4 tsp salt
  • 63ml
  • pinch cayenne pepper
  • 32oz bread cubes (white or whole grain)
  • 4oz dried cranberries
  • 4oz cup chopped pecans (optional)
  • 10-12 tbsp strong vegetable broth or vegetable stock (up to 83ml)
Vegetarian Stuffing - Method

  1. Preheat the oven to 350F/177C and lightly grease a baking dish.
  2. In a small frying pan, sautee the onion, celery and apple until tender with the parsley, sage, salt, cayenne (or regular pepper, if you prefer).
  3. This should take about 5 minutes.
  4. Remove from heat.
  5. In a large bowl, combine the bread cubes with onion mixture, cranberries, pecans, vegetable broth, adding slightly more if the bread is very absorbant (some need more liquids), and mix well.
  6. Taste one of the cubes and, if necessary, add additional salt or pepper.
  7. Pour into prepared casserole dish and cover with aluminum foil.
  8. Bake for 20 minutes.
  9. Remove foil and bake for an additional 20 minutes, until top is crisp and golden.
  10. Serve immediately.
